Brunch Like A Barista



Most of us are fond of grabbing a quick bite from a local café or drive-thru in the morning, but there’s something enjoyable about making your own meal in the morning. Our a.m. options will have you think you’re down the street at the coffee shop from the comfort of your own kitchen.

B.L.A.T Biscuit Sammies

For the sandwich:

2 canned biscuits, baked golden brown according to package instructions

6 strips bacon, cooked

2 eggs

4 slices sharp cheddar cheese

1 large tomato

1 avocado, thinly sliced

Lettuce

For the magic sauce:

1/4 cup mayonnaise

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper

1/2 teaspoon fresh lemon juice

Pinch of salt and pepper

In a small bowl, mix together the ingredients for the magic sauce and set aside in the refrigerator until ready to serve.

Sliced baked biscuits in half and butter both sliced sides of each biscuit. Place on a baking sheet, cut sides facing up. Toast the buns under a broiler set to low until golden brown. Remove from oven. Remove the top halves from the baking sheet and set aside. Add one slice of cheese to each bottom biscuit half and melt cheese under the broiler. Once melted, remove from oven and set aside.

In a medium skillet over medium heat, cook eggs to your preference. To assemble, spread a generous tablespoon of magic sauce on all cut sides of the biscuits. Top the bottom halves with tomato, followed by avocado slices, bacon, egg and lettuce. Finally top with the other half of the biscuit. Serve immediately. Makes two sandwiches.

Overnight Mixed Berry Mason Jar Oatmeal

1/3 cup Greek yogurt

1/2 cup rolled oats

2/3 cup unsweetened milk of choice

1 tablespoon honey

1/4 cup chopped fresh strawberries

1/4 cup fresh blueberries

1/4 cup fresh raspberries

Juice on half a lemon

Whisk together all ingredients in a large bowl. Add to a large mason jar or split between two smaller mason jars. Screw on the lids and refrigerate for at least 4 hours, preferably overnight. Serve right out of the fridge.

Iced Vanilla Latte

1.5 ounces espresso

1 ounce vanilla syrup

7 ounces cold milk

Ice

In the bottom of the glass, add espresso and syrup. Stir together. Fill the glass with ice. Pour in the milk. Stir to combine. Serve immediately.
