Fresh fruit juice is a versatile ingredient that can be put in practically everything! From fruity smoothies to healthier cocktails to desserts with a pop of bright avors, you are going to have a hard time resisting these freshly squeezed recipes!
Lemon Berry Bars
For the crust:
1 1/2 cups graham cracker crumbs
6 tablespoons salted butter, melted
1/4 cup sugar zest of 1 lemon
For the filling:
2 large egg yolks
14 ounce can sweetened condensed milk
1/2 cup fresh lemon juice
2 teaspoons lemon zest
4 ounces fresh raspberries
4 ounces fresh blueberries
Pre heat oven to 350. Lightly spray 8x8 baking dish with cooking spray. In a medium bowl, mix together ingredients for the crust until well combined. Press graham cracker crust into the pan in an even layer. Bale for 10 minutes until golden brown and fragrant.
In a large bowl, stir together egg yolks, sweetened condensed milk, lemon juice, and lemon zest for the filling. Gently fold in blueberries and raspberries. Pour filling over the crust. Bake 15 minutes until set. Chill 1 hour in the refrigerator before slicing and serving.
If you don't love blueberries, you can simply use one berry in the lemon bars, or substitute blackberries!
Sunshine Chia Smoothie
2 bananas
1 cup rasberries
1/4 cup grapefruit juice
1/4 cup orange juice
1 tablespoon lime juice
1 tablespoon chia seeds
Combine bananas, rasberries, grapefruit juice, and lime juice in a blender and blend until smooth. Add chia seeds and combine on low speed. Serve immediately.
Make your morning smoothie a little richer and more complex with 2 teaspoons cocoa powder!
Freshest Margarita
2 ounces silver tequila
1 ounce Grand Marnier
1 1/2 ounces fresh lime juice
1/2 ounce fresh lemon juice
1/2 ounce agave salt and lime wedges for garnish
Rim a cocktail glass with lime juice and the salt. Fill a shaker with ice. Add tequila, Grand Marnier, lime juice, lemon juice, and agave. Shake well. Fill cocktail glass with ice. Strain margarita into the the glass. Serve immediately.
Want to add a little spice to your margarita? Add approximately 1/4 teaspoon cayenne pepper to the shaker when you make the cocktail.
